Has anyone ever tried this recipe?

Power Muffins
3 bananas
1 cup FF cottage cheese
4 egg whites
2 cups oatmeal
1 1/2 cups oat flour
1 tsp baking soda
1 tsp baking soda
cinnamon & vanilla

The macronutrient breakdown per muffin is:
calories: 73
fat: 1
Carbs: 12
Protein: 4

I am wondering if I could add some vanilla ultra size to the mix to up the protein content... any thoughts?

Oh yeah! These are REALLY tasty and pretty easy to make. I always disregarded the oat flour and put in 5-6 scoops of Ultra Size instead. Helps the consistency stay in tact and adds a bunch more protein and healthy fats.... but the taste!! mmmmmmmm. I am getting hungry just thinking about them! I can smell'em in the oven now......

Anyone's input on spelt flour? I get goose bumps when I see higher proteins on plants such as soy. So, does it have phytoestrogens? Wink

Switch out the oats and use spelt. Check out these links:

Sorry Jason... I was initially seeing if anyone had any feedback about the recipe. The directions call for cooking them at 400 degrees for about 15 minutes or until they aren't gooey inside. I plan on making them tomorrow or Thursday night so I will be able to provide some feedback.

Ok, so I made the muffins and must say I am a little disappointed. I substituted the oat flour for vanilla ultra size and used paper muffin cups. Unfortunately, the muffins stuck to the paper and only about 1/2-3/4 of the muffin came out. Not sure if I did something wrong but I think I need to tweak the recipe some more...
