I'm not a huge fan of brown rice, but I'm going to choke it down as a carb source for my final 2 weeks. Any suggestions, other than soy sauce, to season it?

Oh yeah!

The best way to prepare brown rice is boil for 20 minutes then cover and simmer for 45 minutes. Turn off the burner after 15 and leave covered.

-Mix in onion bits or even chopped onions
-Finely chopped almonds
-Skip the soy sauce and use cayenne pepper.
-Use Cajun Meat Magic in the rice
-UMP or Ultra Size with vanilla sugarfree pudding for a dessert (prior to cooking).
-Add wild rice(s)

Mix and match with the above. I like to chop up onions, mix in dried onion bits, almonds, wild rice, then add salt/pepper when served.

How much water do you use when you prepare it like this?

usually it's 2:1 but you boil it for 20 mins so do use more water?

I don't. When you cover it, it minimizes loss by evaporation.

i go to kroger and buy boxes of boil in bag brown rice. about 8 cups cooked when finisehed and usually only $1.33 a box. my cupboard is stocked with it. very convenient and no stickyness from a rice cooker. 10-12 minutes.

Try using chicken broth in place of some (or all) of the water used to cook the rice.

I've found that mixing brown rice and a can of tuna together is an awesome consistency and tastes great. Sometimes I eat my brown rice with lawry's seasoning salt or I sprinkle on some chicken or steak seasoning. Trial and error, worst case like you said you can choke it down, and brown rice is cheap to begin with. Oh, recently I discovered Uncle Ben's brown rice in bag. The "Santa Fe" kind is awesome, preseasoned and packed with corn, beans, and cilantro. Really good.... Good luck to you...

My personal favorite high carb meal: 8 oz. Ground Sirloin (unseasoned), 2.5 cups cooked brown rice (cooked in water and 2 tbsp Olive Oil), mix it all together with TONY'S CREOL SEASONING!!!! MMMMMMM-MMmmmmm. Delicious.

Also, if you live in Louisianna, there is a wicked seasoning called "SLAP YO' MAMA", tastes just like Tony's, but with more spicey kick!!! Awesome and you can't beat that name!

I love mixing my brown rice with some hot sauce and a little bit of UDO's choice oil or extra virgin olive oil. I find this to taste really good especially mixed with some albacore tuna Smile i think I am going to try what Rita suggested though with the chicken broth, that sounds good. Does the broth come in a can or something? Does it matter what kind or brand?

Yeah i just made whole bag of brown rice cooked with chicken broth and I added in some garlic powder and parsley. I enjoyed it very much. Thanks Rita for the idea Smile

My favorite way to spice up my brown rice is dumping a ton of Cholula on there Smile I usually mix in about 5 chicken tenderloins and just go to town with the cholula and it makes it into a tastey meal with some spice.
