I put a whole roaster breast in the crock after
removing the skin. Cover and cook on high all day. Even with no liquid added to the pot it doesn't turn out dry at all.

1-open the frozen chicken breast bag
2-plop the breast into a crock pot set on warm
3-pour in some water
4-put lid on and let cook
5-a couple hours later pull out chicken breast and chew up and eat

WARNING: guys who have girlfriends dont do this in front of them or you will be labeled "Meathead"

INGREDIENTS:
3 boneless, skinless chicken breast halves
1 (12 ounce) jar turkey gravy
1/2 teaspoon paprika
1/2 teaspoon salt-free herb seasoning blend
1 teaspoon soy sauce

--------------------------------------------------------------------------------

DIRECTIONS:
Place chicken and gravy into a slow cooker. Season with paprika, seasoning blend and soy sauce. Cook on high for 4 hours or for 6 to 8 hours on medium. Tear chicken into pieces. Serve over rice, noodles or potatoes.

Recipe i found and have been using. I've added more chicken though, and a little bit more gravy. The gravy is jewel brand chicken gravy, 100 calories per can, i use 2 with 5 chicken breasts.

You could try making a sort of chili - type stew (with or without beans depending on your carb levels)
brown the chicken in a frying pan with onions and celery - stick it in the pot with red peppers (or green) - maybe a few carrots if you like, chili powder, ground pepper, a bit of lime juice, beans if you like, (kidney or black) and some chopped up sweet potatoes (again optional) -- simmer a few hours and voila.

What do you guys think of adding some chicken broth to the pot with water? There's really nothing in it and you can get it lower in sodium. This would be for pre-contest dieting.
Thanks!

I say go for it by making your own broth. It's easy but you need a few hours to be home for it...If you don't know how (just making sure, in case you might not have done it before!)

Take some chicken bones - a whole carcass is great if you have one....Cover it with water and add lots of veggies like onions, celery, garlic...Boil for a few hours. Pour it through a strainer and then skim off the fat. This is very easy if you chill it overnight; everything floats to the top!
If you don't have any bones, even making veg. stock is good and adds taste - basically you boil celery, onions, carrots...and strain.

I don't think commercial stocks taste good -- and usually thye have MSG and ****.
A word of warning- Stay FAR away from powdered stocks - these are loaded in sugar! The first ing. is usually corn syrup solids. (UGH@!!)

I have a book called "Set it and Forget it Lightly!" There are some recipes that aren't so healthy, but there are many good ones. PLus it has recipes for chicken, beef, and fish/seafood. I love it, the Jambalaya is delicious.

chicken breasts
cream of mushroom soup
lipton onion soup mix
1/2- 1 cup water
Extra veggies of choice if desired.

Cook on low 4 or so hours.
This is fairly high in sodium due to the soup mix.
