just got back from vacation, probably the hardest week of my life dieting wise, but there i met a guy who worked for beverly and we started talkin about carb up meals. here the recipe he gave me for a great way to have ur carb meal , ecspecially if ur on the run.

1.5 cup of oatmeal
10oz. sweet potatoe
4oz bannana
cinniamon
splenda (go easy with this, too much gives it a funny aftertaste, use maybe two packets)
1 tablespoon baking soda
1 tablespoon butter

mix it all up and bake it in the oven at 350 for about 20min or until it has the right consistency.
tastes just like bannana bread!

I don't think it's the Splenda that gives it an "off" taste -- it's the baking soda. I think 1 Tbsp. is too much. I make this bread and use 1/2 tsp. baking soda + 1/2 tsp. baking powder.

well thank u.. i might of cried if i had tried to bake it again and it tasted that bad... right now my whole week is really just counting down the days till monday and thursday night!!!

Let me know how it turns out -- and I definately know the feeling of counting down to M & Th nights! Wink

When I make this for Tom I use 6 pkts. Splenda -- he likes to slather the butter on it after it is done baking.

A couple shakes of nutmeg is really good in this as well......

All...If you really want to jazz it up, add the following.

1 tsp allspice (really kills the "sweet potato taste")
1-2 tsp pumpkin pie spice

This makes it phenomenal. When you take it out of the oven, immediately melt the butter on top and sprinkle with a little more splenda and a touch of cinnamon.

i just want to take this opportunity to say thank u. with all of ur insights i enjoyed the best carb night ever last night. i couldnt even wait till it was done cooking all the way so i ended up eating more of a carb moosh, but it still tasted fantastic

i was told by a beverly guy to add about 1/2 or 3/4 cup of water, i added 3/4 and it worked fine. make sure u cook in a shallow enough pan. i cooked mine in a meatloaf dish and the insides never got fully cooked, i ate it anyways and loved every second of it,ill probably even continue to cook it this way. but if u want it to be just like bread, stick with a muffin type pan

instead of using water i take a shot glass and make a mixter of two caps vanilla extract, one cap rum extract and one cap cocunut extract and justa little water. makes it taste wonderful!! Razz

I made the bread last night... my life is changed. It was sooo good, i'm doing this every monday and thursday now.

Used 1.5 cups instant oats, 8oz sweet potato, 4 oz banana, some splenda, some cinnamon, 1/2 tsp each baking soda/powder. I was so happy... Smile

Try adding canned pumpkin as a substitute for the sweet potato.

1/2 cup of the canned pumpkin has 9g of Carbohydrates. Because the pumpkin is very moist, you will need to add less water to the recipe.

Yes, add enough water to make a thick batter-like consistency. I never measured it, I just add what I think I need.

I am kitchen dsylexic ..... so HELP HELP!
Do you use fresh sweet potatos or cooked or canned? What is the deal about the pan ...?? How big? what kind? How long too cook? What temp?
(maybe you can tell I tried to fix this but need help with some of these details .....)

When I make this bread, here are the ingredients I use and the manner in which it's cooked.

I use 2 cups of oatmeal, 1 banana, and 1/2 cup canned, unsweetened pumpkin. I mix them all in my Magic Bullet blender with approximately 1/2 to 3/4 cups of water. I also add 1 teaspoon of baking soda prior to blending. DO NOT add more than that or the whole thing will taste like ****! Trust me! This should make the mixture still quite thick, like a pie filling.

After that, I place it in one of those round throwaway cooking tins that you'd bake a pie in. They're like 3 for $1.50. Place the tin into your oven (that you've pre heated to 350, of course), and bake for about 20 mins to 1/2 hour max!

Personally, I like to put on the Splenda to taste and the butter afterwards, along with some pumpkin pie spice. I hope this clears it all up for you and helps to resolve your "kitchen dyslexia."

hi guys! im dying to try this bread! i am supposed to have 3/4 c oatmeal 6oz sweet potatoe and 1 small banana. any idea as to how much baking soda and water i would need to use? and the sweet potatoe is cooked prior to belnding right? thanks a million.

Hey maggie...me again! I used 6oz of unsweetened pumpkin as stated in one of the suggestions in place of the sweet potatoe. But yes cook the s.potatoe before you blend it.

Use 1/2tsp baking soda and 1/2 tsp baking powder. As for water, you just make it a cake batter consistency so add water little by little (guess about 1/2 cup or less). I also added a drop of vanilla extract and a drop of almond extract.

And I also like the 1tbs butter melted over the top after baking then sprinkle with Splenda and some cinnamon!!

Betty i cant wait to try this! i cant decide if i want the pumpkin or sweet potatoe, is there any nutritional difference that would make a difference in your diet? also do you have to eat it right after you cook it or will it hold a while. i know sometimes the recipes turn to bricks if you dont consume them right awaySmile
