I just received this recipe from Mark Moore. It looks like it might be great.

"Needed a breakfast that I could carry to work and satisfy my sweet tooth."
MUSCLE MUFFINS
3 Cups Oatmeal
2 Scoops of Muscle Provider Vanilla
1 Cup Splenda sugar substitute
1-1/2 Cups of water
2 Eggbeaters (Use the equivalent of two eggs)
2 tsp. Cinnamon
1 tsp. Salt
2 tsp. Baking Powder

Mix water, muscle provider, eggbeaters and cinnamon. Mix oatmeal, Splenda,
salt and baking powder. Then mix all ingredients use a muffin pan coated
in non-stick spray bake at 350 degrees for 20 minutes. They are better
warm but still do well in the refrigerater.

Nutritional Info. per muffin
Protein 5g
Calories 56
Carbs 7g Less than 1 sugar carb

Roger, I've been looking for a breakfast substitute other than a shake on the "Gain and Hardening" meal plans...could this be manipulated with 100% Egg to work??... Sherman

I think you could add a couple of whole eggs to the recipe and cut out a little of the oatmeal and it would probably fit into your diet. You could add a little 100% egg as well, but not too much - just because of the taste issue.

Preheat oven to 350

Male:
2 whole eggs
4 egg whites
3/4 c. quick oats
1 tsp. baking powder
6 pks. Splenda
1 tsp. extract (i.e. vanilla, coconut, banana, lemon, maple etc.)
1 tsp. spice (cinnamon, nutmeg, poppyseeds, pumpkin pie spice etc.)

Female:
1 whole eggs
3 egg whites
1/2 c. quick oats
1/2 tsp. baking powder
3 pks. Splenda
1/2 tsp. extract (i.e. vanilla, coconut, banana, lemon, maple etc.)
1/2 tsp. spice (cinnamon, nutmeg, poppyseeds, pumpkin pie spice etc.)

In mixing bowl add in order: eggs, whites, extract, oats, splenda, baking powder, spice. Mix with an electic mixer on low for about 30 sec. Just enough to wet the dry ingredients & break the yolk. Do not overmix; if you do the oats will sink to the bottom of the loaf or muffins. Pour into a standard loaf pan sprayed with Pam (male) or a mini loaf pan sprayed with Pam (female). Bake 35-40 minutes. The longer cooking time yields a crispier top.

Can also be made into muffins. Use a non-stick muffin pan. Do not use paper cups. The male recipe makes about 6 good size muffins and the female 3.

Some good combinations:
maple extract + cinnamon = tastes and smells like french toast
lemon extract + poppyseeds
vanilla extract + cinnamon
cherry extract + 1Tbsp. cocoa
orange extract + pumpkin pie spice
coconut extract + 1Tbsp. cocoa
banana extract + cinnamon

Enjoy all with a hot cup of coffee!

**And don't forget to add your 5oz./3oz. of protein on the side.

Have been trying fruit in the muffins. Added one apple to the mix yesterday, there were plenty of apples per muffin and tasted great.

These are delicious. I made my own variation w/ chocalate ultra size and a cup less oatmeal. Wow!! It was great I'm gonna try to take the oatmeal down a little more and use just egg whites tomorrow, hopefully it still tastes relatively the same.

I have made a simmilar muffin
12 whites
1 1/2 C oats
splenda
1-2 T jelly - low sugar all fruit

put everything in a blender and blend. Pour into 12 muffin tins. Bake 350 20 min

I eat 3-5 muffins as a serving

I have used more eggs to balance out the ratio and have also just added a scoop of MP as a drink with my muffins

Roger or anyone - I was perusing the site looking for some yummy recipes to try and came across this muscle muffin recipe. Couple of questions.

#1 how many muffins did your batch make?
#2 how did you come up with the calorie count?

I made the recipe and got 12 muffins but the numbers don't add up for 12 muffins. Just the oatmeal alone is 1/2 cup = 150 calories x 6 = 900/12 = 75 per muffin and this is for the oatmeal alone I haven't even figured in the calories for the MP or other ingredients?

Can someone clarify? Am I missing something? Are MY calculations off?

Thanks in advance for any insight anyone can provide...

You can add or subtract whatever you like to make the recipe your own. The addition of cottage cheese may change the consistency, but I say give it a shot and let us know the outcome.
