It's been a long time since I've made these...had sort of forgotten about them. So glad I remembered. Yum!

3 egg whites + 1 whole egg
3 oz very lean beef
1/2 cup oats
Salt/garlic salt to taste

Heat pan over medium to medium high heat. Spray with cooking spray. Mix eggs, beef and oats in a bowl. Add a pinch of salt - or garlic salt and combine all ingredients. Pour in the pan and cook like pancakes. May sound wierd, but it's really yummy and a hearty breakfast alternative. I dip in a little mustard. Makes about 3 medium sized cakes.

Sorry - no, the beef is browned before. Never tried it with raw beef, but don't think that would work. The cakes only take a few minutes on each side to cook and the beef probably wouldn't cook in that time.

You could try brown rice, although I think the oatmeal actually swells when mixed with the eggs and helps give it some of its consistency, and body. Try it with rice and let us know how it works for you.
