MP Potato Brownie

Started my 12 wk diet for June contest last week. My diet guy made one of my meals MP/sweet potato/blueberries. At first I was bummed b/c I knew how to bake great brownies w/ MP&oats. But OMG I can't contain myself-you have to make these. First I made with MP&sweet potatoes(good). I just added the berries in too---OMG SOOOOO GOOD.
Here's the run down for my macros atleast:

27g MP(CHOC)
90g swt potatoes(weigh b4 cooking)
20g blue berries
1/8tsp sea salt

I steam the swts & mash, add MP, 1/4-1/2c. water or coffee even(until batter consistency), add berries/salt & stir.
Bake in baking dish/muffin tin etc 325-350 for 8-10minutes.
Can use microwave too maybe 30 seconds???

If you add more liquid just cook longer, if you add less check in less time. When it's soft to touch & berries have burst should be good for a moist brownie. I could eat another batch but J wouldn't approve. Darn-have to wait until tomorrow. Pre-contest dieting is great. I must be on a MP high of some sort. Eek

Wow, that really seems like an odd combination sister but worth trying when I am off season. I myself do some weird things with my food that turns some people off but is incredibly yummy for me! BTW, thanks for the visual. That is one serving shown here? And I only get 40 grams of sweet with my 115 turkey. No MP and sweet together and certainly no blueberries in my mix.

Enjoy and be sure to post a thread so we can track your short 12 week contest prep! Which one are you doing?

This sounds good. I was just wondering early today, how to make a sweet potato brownie.....I didn't want to try it in case it tasted yucky...lol. Thanks for being brave, I'm gonna try it tonight.

I'm sure the berries will be gone soon & my carbs will be dwindling as well. Hope you got your carb up meal down-Robbi. Yes, this was one meal size serving.
Shar-the potatoes make things more moist. There's a post on here using beans for protein cake-Iv'e tried that too, and it was good. I'll experiment, if you have any ideas.
Btw, I'm doing NPC June 13, in TN. I'll write a post soon!

well most who work with me know Im a lazy food preparer, and this is too much effort for me, but **** it looks good.

Im glad you found a way to make contest dieting more appealing.

You started lean, those fruits may stay, we'll just see how we do:-)

I've seen the white sweets-I'll have to try them.
Staying lean between contest may be worth it if I can keep these treats in. Big Grin
They're best hot out of the oven & a little gooey.
