Here's a nice simple meatloaf

2.5 ground beef (I used 92% since I am 14 weeks)
2 eggs
1 green pepper
1 med onion
1 tsp paprika
salt and pepper to taste preference

If you are off season, the recipe calls for 5 oz grated swiss cheese. I have had it with the cheese, it's awesome.

Beat eggs first, then throw everything together in loaf pan and cook @350 for about 1.5 hours.

I had some today...it's pretty simple deal. I actually used 3 pounds of meat, and my beef is done for the whole week!
