I recycle this recipe on the board every couple of years because, honestly, I forget about it myself. My husband and I have recently brought the “beefcake” back to the front of mind and have been enjoying them over the last couple of weeks. So – I wanted to share this recipe again. It provides a great change up to the normal eggs, beef and oatmeal. It may sound a little strange at first, but give it a try…it’s a super hearty, filling and satisfying meal for any meal…not just breakfast! I had them for dinner last night and am having them for lunch today. If I need a little extra protein in the meal, sometimes I’ll mix up a scoop of UMP or Muscle Provider to drink along with it. Recipe 3 egg whites + 1 whole egg (sometimes I omit the yolk and add an extra white or two) 3 oz lean ground beef (browned) 1/2 cup oats Salt/garlic salt to taste Heat pan over medium to medium high heat. Spray with cooking spray. Mix eggs, beef and oats in a bowl. Add a pinch of salt - or garlic salt - and combine all ingredients. Pour in the pan and cook like pancakes. I like to sprinkle with red pepper flakes and dip them in a little mustard. Makes about 3 medium sized cakes. Double the recipe if your diet calls for larger portions. Yum...I'm back to it with my beef cakes again. If you haven't tried these, you really have to!!! You know how it is...sometimes the thought of more more plain beef, more oats and more eggs makes you want to scream; but when you mix them all together like this the ingredients take on a whole new life. I think of this meal as hearty comfort food approved for dieting. Today, as I was munching on my Beef Cake lunch, Greg here at Beverly popped opend his lunch and bam...a "cake" variation using canned chicken. Chicken Cakes doesn’t quite have the same ring as Beef Cakes, but they looked just as delicious. He topped them with salsa. Yum! Try these out and share any recipe variations you come up with. I was thinking about adding some cooked celery and onion to make them taste sort of like Thanksgiving stuffing without the guilt. Rachel Beverly | |||

lean ground turkey works as well .I chop some bell peppers and also add some dehydrated onions, add some red pepper plus sage and you have sausage.Use your imagination , there are many varieties that can be used to totaly change the taste of this dish | |||

Hi this inspired me to get creative. I can not eat eggs so breakfast has been very tough for me. So I took 1 lb. 99% fat free ground turkey, blended up Vanilla MP in about 4 oz water, poured that over the meat, added 1/2 cp oats and some left over oatmeal to bind. I added a packet or two of splenda and some cinnamon and baked. It has somewhat of a sweet flavor and helps me get over eating just turkey in the morning which I find hard to face I have this with my oatmeal and it is a great replacement to the eggs... very protein dense! | |||
