I've just recently bought some bison meat because I've heard how fantastic it is health-wise. I was wondering if anyone had any recipe ideas for bison meat? Thanks in advance!

Use it any way you would use beef. Be aware, bison is leaner than most cuts of beef so DO NOT overcook it or it will dry out.

Also read the nutritional information. I've found that ground bison actually has higher fat and calorie content that lean ground beef. I think they might mix in fat with it with the ground product, so be careful. I was way off on my count.

I totally agree with Eric, check the fat content of the cut of meat. He is right, some suppliers WILL add fat to the ground bison because it is so naturally lean. Cuts such as steak, roasts, etc. are very lean with any fat visible and can be trimmed away.

I bought some "LEAN" ground bison and there was loads of fat. Buy the steaks/roast and grind it yourself. Much more control. Also, if it is free range, use a lower temp setting to cook. Much better tasting and will actually have omega fats.

I was looking at the selection my grocery store had of the ground bison and some of it had 11g of fat. Ridiculous!

Again, they usually add fat to the ground meat to add moisture, as lean bison is very dry if over cooked. On the upside, grass fed bison is very rich in Omega 3's and has a very healthy fat profile. At one of our local markets you can get 96/4 ground bison, which is about as lean as chicken breast and the flavor is great.

here we go again with the fat is bad thing... buffalo/ bison eats grass, not ****** corn and soy like our gross american cows. the fats this produces is much more beneficial for us humans. i just posted a great recipe for buffalo/bison chili underneath this post......

sorry to be such a grump but id go eat buffalo fats before id go with heavy whipping cream. but thats me and buffalo fat doesnt taste too good in ump chocolate... haha
