Maple "Glazed" Sweet Potatoes

2 1/2 lbs sweet potatoes (cooked, peeled and cut into large chunks)
PAM butter spray
1/4 c sugar-free maple syrup
2-4 packets splenda
1-2 Tbs. finely chopped pecans
( a few mini marshmallows can be added to if you wish)

Spray 8X8 baking dish with PAM. Add potatoes. Stir together the syrup and splenda. Spray the potatoes with PAM and sprinkle the nuts over. Top with syrup and bake for 30 min at 350. If adding marshmallows, reduce time to 25 minutes and add them for the last 5.

This looks a bit nasty to me! I just find sweet potatoes are super sweet to begin with, especially when baked. Why would you add syrup, sweetener and marshmallows to something already sweet?
But hey, if you like it, great.

My third attempt at posting this!!! Mad

Here's a few:

-Pumpking pie? Make those sweeties taste like it by adding McCormick Pumpkin Spice. Or make your own spice by using ground cloves, cinnamon, nutmeg and/or ginger.

-Make it more like pumpkin pie by adding US rather than cream.

-Use the above with a higher content of US on rice cakes.

-Slice it, microwave and use Butterbuds sprinkled all over it. Cinnamon sure tastes good, too.

I have a few more coming this weekend!!! One is much like the tunafish patty described to Lauren...NO...No fish with it. LOL
