Similar to carb-up bread -- but can be used for a healthy carb portion for whatever diet you are following.

2 1/2 c. Oatmeal (I used quick cook)
4 large eggs
12 oz. cooked Sweet Potatoes (I use Dunbar's Vacuum Packed No Syrup Added)OR use 1 can 100% Pumpkin
1 tsp. Vanilla Extract
1 tsp. Baking Powder
1 tsp. Baking Soda
2 tsp. Cinnamon
1/2 c. Sugar-Free Vanilla Davinci (www.davincigourmet.com)
12 drops Stevia liquid (optional -- this makes it sweeter)

With electric beaters, beat sweet potatoes, eggs, SF syrup, & vanilla. Add dry ingredients and mix well. Pour into Pam sprayed 13 X 9 glass pan and bake for 30 minutes.

8 servings:
kcals. 152
fat 4g
carb 25 g
fiber 3g
prot 7 g

Cottage Cheese Frosting:
1 c. Rinsed Cottage Cheese Curds
2 scoops Vanilla Muscle Provider
2-4 pkts. Splenda
Couple Shakes of Cinnamon
Couple Shakes of Butter Buds

In food processor whiz up until smooth. Frost Cake.

8 servings:
42 kcals
<0.5 g fat
1 g carb
8.5 g protein

Fat-Free Cool Whip goes well on top of this too!
