Lisa...My salads are the last meal of the day. I usually have romaine or green leaf (sometimes spinach) and any combination of red pepper, tomato, cucumber, red onion (good flavor - not too strong). And I use balsamic vinegar, or some kind of wine vinegar, 0 cal, 0 carb, 0 salt - plenty of flavor. I also sprinkle citrus pepper (lemon pepper) on it for some extra kick. I usually cannonball the flax and chase with Crystal Light! Good Luck! | ||

Hey Lisa..To kick my salad up a notch and keep from getting bored - I've been steaming fresh green beans and broccoli, then I spray a skillet with Pam and brown some mushrooms;add the green beans and broccoli - brown well. I'll then cube up my lean meat and toss all together. For dressing I use Newman's Balsamic or mix one of my own. Try mustard, red wine vinnegar, dash of splenda and 1 tiny squirt of SF Maple Syrup.. toss into the hot mixture, then add to salad greens. It's filling and not as boring as plain old salad - it's a full meal! | ||

Yum...that sounds good. Most of my meals are packed to go in a cooler for the day so I steam some green beans, brocolli and baby portabells mushrooms al dante and toss them into my salad (I buy the bagged salads) dressing is lemon or vinegar and splenda. On the week end I do as Brochas mentioned only I grill my veggies and add some red, yellow or orange peppers I have grilled whole removed the blackened skin and slice onto the salad. Leslie | ||

I've started using shredded cabbage cole slaw mix (not the dressing, just the shredded cabbage in the bag) instead of lettuce. It's cheap, already prepped and washed, stays fresh for days. I add seasoned rice vinegar and a touch of toasted sesame oil + some sesame seeds, chicken breast and Spice Island's Stir Fry Ginger seasoning. Makes a great chinese chicken salad. Plus, if you're packing it for lunch, the "lettuce" stays crunchy and doesn't get all soggy. Here are some other ways I prepare my slaws: classic american 1 lb. bag coleslaw mix 3 tbs. cider vinegar 2 tbs. oil 1 ½ tbs. sugar ½ tsp. celery seed Combine dressing ingredients in sauce pan and bring to a boil. Pour over slaw and mix. apple 1 lb. bag coleslaw mix 1 apple, cored and cut into matchsticks 3 tbs. apple juice 3 tbs. buttermilk Combine ingredients in bowl. Stir well. Add salt and pepper to taste. asian 1 lb. bag coleslaw mix 2 tbs. seasoned rice vinegar 2 tbs. toasted sesame oil 1 tbs. soy sauce 1 tsp. grated ginger 2 tbs. sesame seeds 1 cucumber Combine dressing ingredients in sauce pan and bring to a boil. Pour over cucumber and slaw and mix. orange mustard 1 lb. bag coleslaw mix 1 cup carrots, cut into matchsticks 3 tbs. orange juice 2 tbs. dijon mustard 1 tbs. sugar 1 tbs. oil 1 tsp. grated orange peel Combine ingredients in bowl. Hey this is B-Man. Other alternative on salad is a hand full of Romain Lettuce, Arogala, 2 tbsps of garlic, steak - 6 oz Filet Mignon preferrable, hand full of Feta cheese and sprinkle Extra Virgin Olive Oil. Toss the salad and you are ready to eat. Enjoy P.S. After cooking your steak for 6 minutes on each side let it rest for a minute or two and cut it into stripes. Delicious. | ||
