does any one have any recipes for ground ostrich for a pre contest plan????

I find pre contest that plain and simple is best. I mix it into veggies hot w/ salt and pepper and cold onto salad w/ a mustard /splenda dressing. Add it to egg whites to in the morn w/ mushrooms. You can make a burger w/ egg white choped mushroom and peppers spices of choice. That is good too. Best way to cook ostrich is covered so that the steam keeps the meat moist. What I like about ostrich over beef is that it does not have to be well done.

thanks Les! I was thinking of trying a meat loaf. I found low carb. soy flour based bread crumbs. i will let you know how it turns out!

FitDoc any recommendations on the cut? Also have you tried the Bison? I had it once on vacation in Vermont and it was awesome.

I tried Ostrich once but perhaps I didn't cook it properly it had kind of an off taste....

I find ostrich and buffalo to be similar. I get then both ground, usually do them as burgers b/c they are easier to weigh. They are comparable to beef, just a richer flavor, w/o the fat. they have about 2g of fat per 3oz serving.

Sorry KimBot, i'm just now reading your response from 30 july. I'm a general and trauma surgeon in group practice in ohio.

As far as buffalo (bison), i order it from blackwing. However, i found a ranch in denver, colorado from which i will begin ordering my bison. Their bison are grass fed and the ranchers specialize in shipping to individuals. The site is www.buffalogroves.com

I guess I may be lucky. I get elk, buffalo, salmon and "meat" from a nearby reservation. This past weekend, I was invited to a "Feast Day" where I was served...Bear.
