Following the Bev contest guide, the final 3 days before the show has suggested 8 oz "steak". I'm assuming Sirloin because it's lean? Or does it matter, I got to thinking that maybe the reason it isn't specified is that maybe you want the higher fat content ? I just need to know which kind to buy. Strip steak is my favorite, but I'll do Sirloin for sure if that's the best plan.
95% Laura's Lean Ground Beef is what I use. Sometimes I will dice regular sirloin which works well. I would avoid cuts that are very high in fat (ribeye, porterhouse, etc)
