What brand/type of cooking oil or spray to use during contest prep?
I just purchased new non-stick skillets and they advise not to use no-stick spray.
I've used the non-stick olive oil/pam for years and never noticed any problems.
Any suggestions?

Buy the little container for spraying your own oils. Olive oil/peanut oil, it just depends on the type of oil you choose. I prefer to stay away from canola for the same reason I choose to stay away from splenda. Nonstick, trust them for a while as they are, just don't use high heat. Nothing should stick to them.

Here is just one reason:

"Sucralose

Consumer name: Splenda

Discovery: 1976 as an insecticide

Approved for use: 1998

Made from sugar by removing one of the -OH (hydroxyl)
groups and replacing it with -Cl (chlorine), which in the world of
science, this is called a chlorocarbon. The addition of
the chlorine decreases the absorption of sugar by some
people. Note - sucralose zero impact on blood glucose levels
is not entirely true as it cannot be determined who is
susceptible to absorbing some of the altered sugar molecule. Splenda is gaining popularity
as more and more people move away from aspartame. The addition of the chlorines to the
sugar molecule increases chlorocarbons being delivered to our cells. Chlorocarbons have
been used in insecticides for many years. In the 1970's DDT was banned as it caused
birth defects. The sucralose molecule is a related to this same banned pesticide, yet we
have been sold on its safety by the FDA approving its use in sugar-free foods.

Possible side effects decreased thymus size. This organ is primarily responsible for the
function of your immune system. How would you like something to lower your immune
response to common bacteria, fungi and viruses!? Another possible side effect is increased
liver size because the liver is trying to rid your body of this toxin.

Growing in popularity and in being used in a wide range of products."
