Lots of information coming out on this grain. Although it isn't exactly a "new" food source. It is already being called a "Super Food" because of its' superiority to Rice and Maize and Potato as far as carbohydrate source, fiber and even a complete essential amino acid componant!! That is a pretty amazing roster of things for one food to possess.

The protein to carb ratio is approximately 1:2 and digests similarly, although at a slower rate, than brown rice. Any one experience this super food yet? How do you feel using it as opposed to the more traditional carb sources?? How does it affect your workouts? Energy output?

Very interesting stuff....

Chunk, I have not but always open to new food sources, though, it wont replace my pototo helpings, how is this quinoa for potassium???

Ill give it a try, where do I find it though?

Ill be honest I havent heard of it before.

I believe that quinoa is high in Magnesium, Potassium, Phosphorus and some B vitamins. Really interesting food. I just talked with a WNBF competitor friend of mine who has been using quinoa for 1 week now and claims that it is phenominal! He says he feels better, and he looks better, more vascular and so forth.

You may have to go to the health food section of your grocery store. Maybe even Wallmart has it?? It is NOT cheap though. Not difficult to harvest, but it is imported from South America primarily.

I have been using quinoa for one of my carb sources for several years now. I have not noticed any visible differences, but I feel if you are going to take in carbs why not use a nutritional powerhouse. As Vijay described, quinoa is a complete food source. Protein, carbs, and a little fat in one package. Not many foods out there that can campare. A couple of our local grocery stores carry it, and if you have a Whole Foods it will definitely be on the shelf. Easy and fast to prepare and tastes great. I highly recommend adding it the your diet.

LMAO! I had this picture of two guys wrestling, "GIVE ME THAT POTATO!"

Spelt is supposed to be good, a wheat replacement as it is practically the origin of wheat. I'm not sure, but spelt seemed to give me the same problems as soy. Rough on the lower GI. I think I'll try less in the mix, probably closer to Ezekiel bread.

Starches/grains: I go to a bulk section and get different rices and many times, I'll mix several of them.

Potatoes...they're now added back into the diet. Smile

Im game, Im going to hit Whole foods and incorporate this. Ill report back.

Ill probably do it place of two oatmeal meals...a friend of mine already sent me the grams conversion so Ill just make a substitution and see how it works.

It has 3x the potassium of brown rice, me likey that.

Anyone know which is best for contest diet?
Opinions on regular oatmeal, steel cut oats, quinoa, rice cereal?
Haven't tried quinoa yet, but don't want to change too much close to contest.

Oops, I was wrong about the 1:2 ratio. There is about 6 grams complete protein vs. 28 grams carb per serving. Still promising though!
